After installing new cylinder heads on a 5.7 Hemi, do I just make sure the push rods are installed in the correct intake/exhaust places and then torque down the rocker arms without having to rotate the assembly and measure for clearance with a feeler gauge? I did not replace the cam or lifters by the way......

Looks like we use Roller Hydraulics.
So you don't adjust Hydraulic lifters.
Did you check the overall length between the Intake & Exhaust pushrods?

I would (I ALWAYS) rotate the assembly by hand, with the sparkplugs out
to check for clearance before starting
after doing any major changes like new pistons, cam, crank or heads.

if they are NEW Lifters, remember to soak them in motor oil.
But I guess as we are using 0-40 weight in the SRT, things flow better than back in the 40wt days, but still.

Even if you use 5-20 in the 5.7, it is advisable to pre-soak.
I even still do that with my Oil Filters.

The car has less than 2,000 miles on it, so I won't be swapping lifters, pushrods or rockers, just installing the Edelbrock heads and Edelbrock Aluminum intake. I don't want my Challenger to ever experience a drop valve seat that the factory heads are prone for.

Edelbrock is usually good about including instruction,
or should be available on their WEB site.

    Keep us informed.
Hope you have taken good, repeatable BASELINE performance testing.

Dropping Valve Seats! WOW ... guess we're lucky in that her 5.7 ('08 GC Limited) has 142K on it and the only PITA problem we've had is the 02 Sensor "Slow responding running Lean-Rich" Codes. We've changed EVERYTHING that's even remotely associated with the O2 sensors and the CEL keeps popping on. Gonna trade it in shortly so ...

It was the earlier 6.1 that had a "valve problem" ,
    I haven't heard of a 5.7 doing that.

I contacted Summit Racing and Jegs and both confirmed that if just replacing the heads and using the stock cam, push rods and lifters all that needs done is the push rods seated in the lifters and then torque down to manufacturer specifications. And yes, all 3.7, 4.7 & 5.7 liter Mopar Motors at one point had the dropped valve seat problem. Google it and you'll be surprised what you find.

Supposedly Mopar addressed the issue silently from the 2012 models on up and fixed the head problem, but I'm not sure I trust them. I'm going to get my 2006 300C's heads replaced ASAP cause it's one of the models that drops the valve seats!!!
